In Epiphany as well as Foliate (which uses WebKitGTK to render ebooks), there is no way to select text on touchscreen devices. You can double tap to select a single word, but as there are no handles you cannot select more than one word at a time. I see there was a thread in 2013 about this, but nothing since.
